Tri-Trip Dinner

INGREDIENTS:

  • 1 untrimmed grass-fed tri-tip
  • 2 tablespoons grass-fed ghee
  • 2 tbs each of salt, organic garlic powder, and organic pepper (mixed together as seasoning)

EQUIPMENT NEEDED:

  • Instant-read thermometer
  • Large oven-safe skillet

INSTRUCTIONS:

  1. Preheat oven to 425°F
  2. Trim off any silver skin from the bottom of the tri-tip
  3. Sprinkle salt, pepper, and garlic seasoning over the whole tri-tip
  4. On the stove, heat ghee in an oven-safe skillet on high heat. Place the tri-tip fat side down.
  5. Cook on medium-high heat for 4 minutes.
  6. Flip tri-tip over and place skillet in the oven.
  7. Roast for 10-15 minutes per pound. Cook until internal temp in the thickest part of meat reads 135°F for medium-rare. Cover with foil for 10 minutes.
  8. Slice the roast by cutting in half at the center point and then across the grain on each end.
