Chicken Liver Pate

INGREDIENTS:

  • 4 1/2 oz grass-fed butter
  • 1 large organic onion, chopped
  • 2 cloves organic garlic, crushed
  • 2 slices organic, antibiotic free, rindless bacon, chopped
  • 9oz organic pasture-raised chicken liver, trimmed
  • 1/4 teaspoon dried thyme
  • ground pepper
  • 2 tablespoons grass-fed cream
  • 1 tablespoon of brandy (optional)
  • 10z grass-fed butter, melted

TOPPING

  • 20z grass-fed butter, melted
  • Herbs, chives & or bacon for garnish (optional)

INSTRUCTIONS:

  1.  Melt butter in a pan, add onion, garlic and bacon.
  2.  Cook until onion is tender & bacon is cooked.
  3. Add chicken livers and cook, stirring occasionally, for 5-10 minutes.
  4. Remove from heat.
  5.  Stir in thyme, pepper, cream, brandy (optional) & melted butter.
  6. Spoon mixture into a food processor or blender & process until smooth.
  7.  Pour into serving dishes.

TOPPING

  1. Pour melted butter over pate.
  2. Sprinkle with toppings of choice.
  3.  Refrigerate pate overnight.
  4. *Let stand at room temp 30 minutes before serving
